Who said extra virgin olive oil was only for savory recipes? It can also be used to make the sweet things in life, whether it’s dessert or breakfast pancakes. To make these pancakes even healthier, you can top it with the berries of your choice. We recommend blueberries!

Blueberries have a diverse range of micronutrients, including some of the essential dietary minerals such as vitamin C, vitamin K, and fiber. Raw blueberries are also high in antioxidants, which may reduce risks of disease such as inflammation and cancer, and help improve brain health and nervous system function. Plus, they’re delicious!

Serves 4

Ingredients:

  • 1 3/4 cups flour
  • 2 tablespoons of sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon of salt
  • 1 1/2 cups of buttermilk
  • 1 large egg
  • 1/4 cup Salud de Paloma extra virgin olive oil – order online or see list of places to buy
  • Maple syrup to taste (less is more!)
  • Fresh berries – blueberries, raspberries, strawberries, blackberries or whatever you choose!

Directions:

Pre-heat oven to warm.
In a large mixing bowl combine flour, sugar, baking powder, baking soda, and salt.
In another bowl whisk together the egg, buttermilk, and olive oil until smooth.
Stir egg mixture into flour mixture just until combined.
Pre-heat non stick griddle.
Using ¼ cup ladle pancake batter on griddle, cook until bubbly and edges are lightly browned on the bottom; flip and brown the other side.
Transfer the pancakes to a baking sheet and place in warm oven.
Serve warm with maple syrup and fresh berries.
