AUSTIN, Texas – November 4, 2013 – In November, Salud Corporation is proud to celebrate the one-year anniversary of Salud de Paloma extra virgin olive oil production. Salud de Paloma, produced in Central Texas in partnership with the Texas Hill Country Olive Co., is a social enterprise of the nonprofit organization Business & Community Lenders of Texas (BCL of Texas), which is dedicated to supporting veteran, women, and minority owned businesses.

Salud Corporation’s mission is to help families eat healthy foods and prevent chronic diseases such as diabetes, cancer, and heart problems, while creating job opportunities for individuals seeking employment in the farm-to-table industry.

On Tuesday, November 5, Commissioner Margaret Gomez will read a resolution designating November as Diabetes Awareness Month in Travis County, honoring the work of Salud de Paloma in the work they do to promote healthy nutrition in the Latino community.

“It takes collaboration among community leaders and committed health and nutrition organizations to combat diabetes – our olive oil company was formed with this in mind,” says Rosa Rios Valdez, co-founder and president of Salud de Paloma.

Salud de Paloma is proud to support other organizations doing work in improving the health of the Latino community, such as Latino HealthCare Forum who leads grassroots campaigns in living healthier and is currently leading efforts to help Hispanics sign up for health insurance under the Affordable Care Act.

HOPE Farmers Market, open every Sunday at Saltillo Plaza, engages the community in activating culturally significant spaces in East Austin while supporting a regional food system, celebrating local culture and increasing awareness of and access to healthy food. Salud de Paloma has been actively involved at their farmers market since they moved to their new location in March of this year.

During American Diabetes Month throughout November, Salud de Paloma will promote healthy recipes using olive oil, tips on how to prevent diabetes, and available resources in the community – through its website, social media networks, and farmers market booths in Austin, San Antonio, McAllen, Laredo, and El Paso.
